Ingredients
4 boneless, skinless chicken breasts
1/4 cup balsamic vinegar
2 tablespoons honey
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper, to taste
1 cup cherry tomatoes
Fresh basil, chopped (for garnish)
Directions
Preheat your oven to 400°F. Season the chicken breasts with salt, pepper, dried basil, and dried oregano.
In a small bowl, whisk together balsamic vinegar, honey, olive oil, and minced garlic. Heat an oven-safe skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until browned.
Add cherry tomatoes to the skillet. Pour the balsamic marinade over the chicken and tomatoes.Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken is cooked through.
Garnish with fresh basil and serve the balsamic chicken hot with your favorite side dish.
