Ingredients
For the Salad:
1 can (15 oz) black beans, rinsed and drained
1 cup corn kernels (fresh or frozen)
1 avocado, diced
1/2 red onion, finely chopped
1/4 cup cilantro, chopped
1 jalapeño, seeded and minced (optional)
For the Lime Vinaigrette:
3 tbsp olive oil
2 tbsp lime juice
1 tsp honey
1/2 tsp cumin
1/2 tsp salt
1/4 tsp black pepper
Directions
In a large bowl, combine the black beans, corn, avocado, red onion, cilantro, and jalapeño (if using). In a small bowl, whisk together the olive oil, lime juice, honey, cumin, salt, and black pepper until well combined.
Pour the vinaigrette over the salad and gently toss to coat all ingredients evenly. Let the salad sit for 10 minutes to allow the flavors to meld.
Serve chilled or at room temperature.
